Equipment

  • 1 large ziploc bag
  • 1 small mixing bowl
  • 1 shallow baking pan
  • 1 bbq!

Ingredients

  • 2 ½ - 3 lbs flank steak
  • ¾ cup soy sauce
  • ¾ cup red wine
  • ½ cup oil (Spectrum Naturals Refined High Oleic Safflower Oil)
  • 2 tbsp grated fresh ginger
  • 2 tbsp finely chopped garlic
  • 2 ½ tbsp brown sugar
  • Optional: 1 tbsp chili oil or paste, sriracha or hot sauce to give it a little kick!
  • salt & pepper to taste

Instructions

  • Score meat with shallow, diagonal criss-cross cuts at roughly 2” intervals.
  • Place steak into a large Ziploc bag.
  • In a bowl, mix all remaining ingredients together, seasoning to taste with salt & pepper.
  • Pour into ziploc bag, making sure the steak is fully covered by the marinade and seal tightly.
  • Place the bag into a shallow baking pan.
  • Refrigerate for at least 4 hours but preferably up to a day before grilling.
  • Flip the bag of steak over once or twice during its’ chilling time.
  • Take steak out of the fridge at least an hour before barbequing, and bring it to room temp.
  • BBQ meat to medium rare and then cover and let rest for 5-10 minutes before slicing it thinly across the grain.

Notes

HAUS TIP: marinate your steak overnight and turn it several times in its marinade bath before it hits the grill! You can also freeze the steak in its marinade in the Ziploc bag for up to a month. When I do this I double Ziploc it for freshness! Then simply thaw on the counter before grilling, I take it out mid-morning and it should be good to go by dinner. This freezer method creates what I think is an even more tender piece of steak!! I like to do this in the summer, then I have a stash of marinated meat on hand for any last minute get togethers!
